Our NHS knives are from Seiki City, Japan, famous for the Samurai sword and fine Japanese cutlery. They feature extraordinarily thin blades of the highest quality compound steel in the center and outer sandwiching layers of SUS-410 stainless steel. Each blade is finely ground, tempered, and sharpened. NHS combines sword grade high carbon steel for maintaining a superior edge with the convenience and durability of stainless steel.

#1800 SMALL SLICING KNIFE

Our smaller, lower cost 1800-Series NHS Knives have rosewood handles, plastic ferrules, with the same blade contruction as our 5000 Series knives. The pointed blade of this version is excellent for slicing meats as well as vegetables. 5 1/4" blade, 9 5/8" overall

#1801 SMALL VEGETABLE  KNIFE

This smaller version of the 5001 vegetable slicing knife, due to its lower cost, is equally popular for macrobiotic cooking. Also has the rosewood handle with plastic ferrules. 5 1/8" blade, 9 1/2" overall.

#5000 LARGE SLICING KNIFE

The pointed blade of this version is excellent for slicing meats as well as vegetables. The knife has a black ebony wood handle, riveted to the body, and stainless steel ferrules with special attention paid to balance, honing and temper. Comes with Use & Care instructions. 7 1/4" blade, 11 3/4" overall.

    

#5001 VEGETABLE  KNIFE

This is the vegetable slicing knife preferred by foremost macrobiotic cooking experts in North America. 6 1/4" blade, 11 1/8" overall

    

#5280 SUNCRAFT KNIVES

This handy fruit paring knife has a razor-sharp, stainless steel blade. A solid teak handle and sheath makes it ideal for picnics and camping trips. Also great in Bonsai layering. Supplied individually or in an attractive counter display box of 10 knives.
